Open Faced Turkey Meatball Sandwiches with Fresh Tomatoes and Peppers

Someone asked me recently if I could do a meal in twenty or thirty minutes. So I decided to set the timer and see if I could! Ingredients: 1 onion 2 bell peppers 1 bag (16 oz.) frozen turkey meatballs 3 large tomatoes handful of fresh basil salt, pepper oregano, garlic, thyme 2 rolls, or 4 slices of toast First I set the timer: Then I started the pot on the stove, and added some olive oil. I peeled an onion, chopped it in half, and sliced the halves into slices: Into the pot went the slices. Then I roughly sliced the bell peppers: Meanwhile, the meatballs went into a bowl and into the microwave. (just to warm - these were fully cooked ones. I think these came from Aldi. Other stores carry similar products) Stir the onion and peppers, and season with salt and pepper. Then chop the tomatoes: Add the tomatoes to the pot, along with about 2 teaspoons of oregano, 1/2 teaspoon of thyme, and a few cloves of garlic (or the frozen or dried equivilant). When Life Gives You Zucchini ...

.... make zucchini casseroles! The CSA share this week: It was actually only supposed to include 4 zucchini, but there is a "trade" box, so if you don't like something you can trade for a different vegetable. I didn't think the cucumbers look too great, so I traded mine for zucchini. My thrown together casserole included: 2 large onions (Vidalia, actually), chopped and cooked some chopped garlic (again my little Trader Joes garlic cubes) fresh chopped basil, rosemary and parsley from my garden - generous handfuls 3 zucchini, sliced into half moons 2 cans of diced tomatoes, drained about 2 pounds ground beef, browned and drained 1 cup leftover cooked rice from my freezer salt, pepper (I was heavy handed with the fresh ground pepper - gave it a nice bite) shredded mozzarella bread crumbs I combined all of the ingredients except the cheese and bread crumbs, poured it into a 13 x 9 pan, and then topped it off with the cheese and crumbs. The simplest of recipes is just the thing for a summer picnic. Perhaps you have a reason to attend one today? One of my favorite summer salads: Fresh tomatoes Slices of buffalo or fresh mozzarella Fresh basil, chopped in long slivers. If you have both purple and green basil, even better. Combine these items in a bowl. If you really want to, add a bit of balsamic vinegar and olive oil ... but I normally just eat it plain. The fragrant basil just stuns the senses and makes this the perfect summer salad. I often eat this for a simple lunch on top of a bed of lettuce.
